Con sabores italianos cl&aacute;sicos, se inspira en recetas tradicionales del sur de Italia, ofreciendo un comienzo fresco y sabroso para <a href=\"https:\/\/diabetes.org\/food-nutrition\/eating-for-diabetes-management\" target=\"_blank\" rel=\"noopener noreferrer\">cualquier comida<\/a> .<\/p>\n<p><strong>Ingredientes<\/strong><\/p>\n<p>Para la antipasti:<\/p>\n<ul>\n<li>1\/4 de cabeza mediana de radicchio, cortada en rodajas finas<\/li>\n<li>1 cabeza de lechuga romana, cortada en rodajas finas (descarte las hojas exteriores)<\/li>\n<li>1 tomate grande, cortado en cubos medianos<\/li>\n<li>1 calabac&iacute;n, cortado en cubos medianos<\/li>\n<li>2 onzas de aceitunas Kalamata, sin hueso<\/li>\n<li>1 cebolla roja mediana, cortada a lo largo por la mitad y en rodajas contra la fibra<\/li>\n<li>2 onzas de pimientos morrones rojos asados<\/li>\n<li>2 onzas de salami seco o sopressata (o ambos), cortados por la mitad<\/li>\n<\/ul>\n<p>Para el aderezo:<\/p>\n<ul>\n<li>1 taza de aceite de oliva virgen extra<\/li>\n<li>1\/2 taza de vinagre de vino tinto<\/li>\n<li>1 cucharada de jugo de lim&oacute;n<\/li>\n<li>1\/2 cucharada de stevia l&iacute;quida<\/li>\n<li>1 cucharada de ajo en polvo<\/li>\n<li>1\/4 taza de queso feta desmenuzado<\/li>\n<li>1 cucharadita de sal<\/li>\n<li>1 cucharadita de pimienta negra<\/li>\n<\/ul>\n<h3><strong>Instrucciones<\/strong><\/h3>\n<p>1. En un taz&oacute;n mezclar el radicchio, la lechuga romana, los tomates y el calabac&iacute;n con la mitad del aderezo.<\/p>\n<p>2. En una fuente grande para servir ensalada, colocar la mezcla de lechuga en el centro.<\/p>\n<p>3. Colocar las aceitunas Kalamata, los pimientos morrones rojos asados y la cebolla en tres lugares separados del plato.<\/p>\n<p>4.
