Couscous Salad

Ingredients for 1 serving:
- 1⁄3 cup couscous
- 1⁄3 cup water
- 1⁄2 cup cooked chickpeas
- 1⁄2 cup chopped cucumber
- 60 grams (2 oz) panela cheese (you can also use cottage or ricotta-style cheese)
- 1⁄4 cup cilantro
- A handful of mint leaves
Instructions:
- Boil water in a pot.
- Add the couscous, cover the pot, turn off the heat and let the couscous absorb the water for 5 minutes.
- Place the couscous in a bowl and add the cooked chickpeas, the chopped cucumber, the panela cheese, the chopped cilantro and the finely chopped mint leaves.
- Mix all the ingredients well.
To serve:
