Couscous Salad

Ingredients for 1 serving:

  • 1⁄3 cup couscous
  • 1⁄3 cup water
  • 1⁄2 cup cooked chickpeas
  • 1⁄2 cup chopped cucumber
  • 60 grams (2 oz) panela cheese (you can also use cottage or ricotta-style cheese)
  • 1⁄4 cup cilantro
  • A handful of mint leaves

Instructions:

  1. Boil water in a pot.
  2. Add the couscous, cover the pot, turn off the heat and let the couscous absorb the water for 5 minutes.
  3. Place the couscous in a bowl and add the cooked chickpeas, the chopped cucumber, the panela cheese, the chopped cilantro and the finely chopped mint leaves.
  4. Mix all the ingredients well.

To serve:

Serve and enjoy!
