The Ultimate Superfood Bites

The Ultimate Superfood Bites are the perfect snack—nutrient-packed with sunbutter, chia seeds, pumpkin seeds and blueberries.

They’re bite-sized and ideal for road trips or beach days. My aunt thought they were meatballs (they’re not), but they’re definitely a must-have.

The Ultimate Superfood Bites prove the best part of any journey isn’t the destination—it’s the snacks.

Ingredients

  • 5 Medjool dates, pitted and roughly chopped
  • ½ cup sunflower seed butter
  • 1 Tbsp. coconut flour
  • 2 Tbsp. chia seeds
  • ½ cup unsweetened coconut flakes
  • ¼ cup dried blueberries
  • ¼ cup pumpkin seeds

Instructions

  1. In a food processor, mix dates, sunflower seed butter, chia seeds, and coconut flour until well combined and dates are broken down.
  2. Add coconut flakes and process further.
  3. Stir in blueberries and pumpkin seeds.
  4. Roll mixture into 10–12 small, bite-size balls.
  5. Store in the refrigerator.

Yields: 10-12 bites

Prep Time: 20 minutes

Per Serving (12 servings): 17 g carbohydrates
