The Ultimate Superfood Bites

The Ultimate Superfood Bites are the perfect snack—nutrient-packed with sunbutter, chia seeds, pumpkin seeds and blueberries.
They’re bite-sized and ideal for road trips or beach days. My aunt thought they were meatballs (they’re not), but they’re definitely a must-have.
The Ultimate Superfood Bites prove the best part of any journey isn’t the destination—it’s the snacks.
Ingredients
- 5 Medjool dates, pitted and roughly chopped
- ½ cup sunflower seed butter
- 1 Tbsp. coconut flour
- 2 Tbsp. chia seeds
- ½ cup unsweetened coconut flakes
- ¼ cup dried blueberries
- ¼ cup pumpkin seeds
Instructions
- In a food processor, mix dates, sunflower seed butter, chia seeds, and coconut flour until well combined and dates are broken down.
- Add coconut flakes and process further.
- Stir in blueberries and pumpkin seeds.
- Roll mixture into 10–12 small, bite-size balls.
- Store in the refrigerator.
Yields: 10-12 bites
Prep Time: 20 minutes
Per Serving (12 servings): 17 g carbohydrates
