Bright and Fresh Morning Salad

A salad in the morning? Here us out…
Salads are a great addition to any meal—even breakfast—thanks to their ability to promote fullness and balance. This refreshing morning salad recipe pairs carbohydrates with healthy fats and greens, and it features antioxidant-rich pomegranate seeds, which contain three times more antioxidants than red wine, green tea, blueberries, or cranberries. Clementines add a bright, citrusy touch that makes this salad a vibrant way to start the day.
Ingredients
- 3 green apples
- 4-6 clementines
- 1 cup of pomegranate seeds (fresh, that packaged stuff is gross)
- Olive oil
- Lemon juice (fresh please)
- Salt and pepper
- 1 box of arugula
- 1/2 wedge Parmesan, freshly shredded (optional)
Instructions

Slice green apples into 1/8-inch half moons by cutting off all four sides and then slicing into thin pieces.

Peel clementines, leaving the pith on if preferred, as it’s less bitter than other citrus varieties.

In a small bowl, whisk together the juice of one lemon with 1/4 cup of olive or avocado oil. Add salt and pepper to taste.

Place the sliced apples at the bottom of a large salad bowl. Drizzle about 1/4 of the dressing over the apples and toss to coat.

Add arugula and gently mix with the apples.

Sprinkle in 3/4 of the pomegranate seeds and toss lightly. Reserve the remaining seeds to sprinkle on top when serving.

Add more dressing to taste before serving.
