Think Pink! Cocktail: A Low-Sugar Sip for Celebrations

Watching your sugar but still want to raise a glass? Think Pink! is the toast-worthy sip you’ve been looking for.
Think Pink! is a house favorite for both men and women and is fresh and pink, with a hint of sweetness. The fresh watermelon juice gives it a practically perfect pink color, but keeps it from being overly sweet. This recipe also includes Simply Rosemary—a house made simple syrup that is infused with fresh rosemary. We also love to infuse it with other herbs, like mint or lavender. It is terrific in cocktails and ice teas and has 8 grams of carbohydrate per tablespoon/half ounce.
Ingredients
For simply rosemary:
- 1/2 cup water
- 1/2 cup sugar
- 2 twigs fresh rosemary
For cocktail:
- 2 ounces vodka
- 1 ounce fresh lemon juice
- 1 tablespoon Simply Rosemary *Recipe above
- 2 ounces fresh watermelon juice
Instructions
For Simply Rosemary:
- Combine water and sugar in a sauce pan and heat until dissolved.
- Add rosemary, place lid on pan and remove from heat.
- Let steep for 20 minutes, then remove rosemary and cool.
- Store in airtight bottle for up to one month in the refrigerator.
For cocktail:
- Place all ingredients in a cocktail shaker with 5-6 large ice cubes, shake vigorously and strain into a martini glass. Garnish with anything pink and enjoy.
Yields: 1 cocktail (+ leftover simply rosemary)
Prep Time: Simply Rosemary: 3 minutes + cooling time, Cocktail: 1 minute
Per serving (1 cocktail): 15 g carbohydrates
